The drink begins with a firm earthy and peaty taste from the Ardbeg Scotch (cited on its web site as “perhaps the most peaty malt whiskey in the world”) and slowly changes flavor gears to a semi-sweet apple for the finish. The PI reports, "On January 1, 1916, Prohibition began in Washington State, making the production, distribution and possession liquor illegal. The law passed three years before the Eighteenth Amendment prohibited liquor in the rest of the nation, and it lasted seventeen long, dry years, until December of 1933. But Prohibition didn't mean the end of party - it just meant the party went underground. Washington State, in particular, became a hot bed for thinly-veiled speakeasies due to corruption within law enforcement and proximity to Canada (where liquor remained legal). And now you can take after her at Tavern Law—where not only can you drink like they did in the old days, but get an education as well, since just about every drink on its canonical cocktail menu comes with a brief description of where it came from, who invented it, and why. The bar makes a point of searching out old, dead, lost, and forgotten mixed drinks and bringing them back to life in as close to their original incarnations as possible, sourcing all manner of super-artisan or ridiculously small-batch liquors and mixers and making everything else from scratch. As such, the menu also integrates original recipes from the staff. The Birchwood (Rye, Cognac, Cynar, Punt e Mes, Licor 43 and a cucumber garnish) was invented by Nathan Weber, a current bar manager at Tavern Law.  "He's working upstairs right now," said our bartender, who nodded to the bank vault door to the side, referring to the bar-within-a-bar that's the center of most Tavern Law-related conversations between people who've yet to go there. &lt;br /&gt;The Birchwood's flavors are staggered so well the only thing that came to mind at first was the three-course-meal gum from Willy Wonka and the Chocolate Factory--first the cognac, then the cucumber, rye, vermouth, and the citrus-based Licor 43 for dessert! Finally, the Cynar serves a bitter artichoke-based kick in the ass to bring your taste buds full circle.It reminded me of the prototype booze I was served at Sun Liquor, a fact that was unsurprising, as it shared a majority of ingredients. But this version was more matured, more balanced and more, well, complete. In addition to the comfortable base of cognac, vermouth and whiskey, the Cynar and Licor 43 duel for attention, both dominating the beverage in their own ways. It's like a delicious turf war in your mouth!&lt;br /&gt;&lt;br /&gt;It was a tremendous cocktail. We'll ruin the punch line.  The article ends with, "&lt;strong&gt;Which is why Tavern Law has now rocketed onto my list of favorite restaurants. It isn't merely that I would happily come back just for the food, forgoing the cocktail list and drinking nothing but water. No, if allowed I would move permanently into the crawl space below the bar and live like a troll, drinking nothing but whatever dripped from the bar gun and eating sautéed rocks two meals a day—provided that the third would come off the chalkboard menu, cooked for me whenever I got hungry.&lt;/strong&gt;"&lt;br /&gt;&lt;br /&gt;Do take a moment to read the entire story by clicking the blog title above. It just might make you hungry.&lt;br /&gt;&lt;br /&gt;The reviewer writes, "I want to be careful not to overstate this, but those potatoes were the single best potato-based appetizer I have ever had in my life, anywhere. Better than any order of fries. Better than all the house-made potato chips everywhere. They were what every potato wants to be when it grows up.&lt;br /&gt;&lt;br /&gt;And it was so simple: just perfectly chosen fingerling potatoes, high in sugar, low in starch, split in half, smoked (I can only assume) by magical elves with secret powers, then crusted with spice rub and fried 'til golden in every way that word can be taken. They tasted like they'd been fried in bacon grease, and had the texture of perfectly constructed chocolate truffles—a little crunch from the shell of spice, then a warm, soft center, with a bit of texture from the skins that had been left on. They were, in a word, unbelievable.&lt;br /&gt;&lt;br /&gt;Which of course meant I had to go back for more.&lt;br /&gt;&lt;br /&gt;The next night, the bartender was handing out tastes of a dessert experiment from the kitchen: peaches soaked in vodka and set atop mascarpone like peaches and cream. There were a few more people at the bar, scattered around the secondary bar and the tertiary bar and the clubby interior of Tavern Law's back room. The chalkboard menu was the same, similarly simple—odd in its easy, American influences and roots, because "easy" and "simple" are not words one generally would use to describe the work done by Tough and McCracken at Spur.&lt;br /&gt;&lt;br /&gt;There was pan-fried trout, a burger with onion jam and pork belly, a green salad, some lamb. On other nights, there's roasted Brussels sprouts with bacon, turnips, and smoked almonds; potatoes done with wild mushrooms; nearly classical confit legs of duck. I went for that most American of summertime indulgences: fried chicken with warm potato salad, because I figured that fried chicken is so easy even for a really good galley to screw up that this second-thought kitchen at Tough and McCracken's cocktail lounge stood a really good chance of blowing it completely.&lt;br /&gt;&lt;br /&gt;But it didn't. The kitchen didn't just do a solid plate of fried chicken, but an amazing one: partially boned-out breast, rib, and leg sections done with the skin on, in a crisp cornflake crust, fried perfectly with an expert's sense of doneness so that the meat was wet with fat and the crust had formed a shell both crisp and yielding. All this was mounted over a potato salad that was barely the suggestion of a potato salad: the same fingerlings used in the smoked potatoes, boiled this time, shocked before losing their stiffness, and dressed in nothing but a smear of coarse-grain French mustard. Yet, things feel a bit different, a bit more approachable. The speak-easy style bar feels less self-conscious now.&lt;br /&gt;&lt;br /&gt;It's partly the food. Less dinner fare and more pub grub, albeit gussied up: an oxtail banh mi sandwich one week, a cheeseburger topped with pork belly another week.&lt;br /&gt;&lt;br /&gt;It's also the cocktails. All specialty drinks cost $9 now, none more. There's happy hour now too, with $7 cocktails — a rum drink with aggressive notes of clove, cinnamon and nutmeg called Kingston Cocktail; a sparkling take on the mojito called Old Cuban; and an English Fizz that tasted like a spiked Earl Grey iced tea with a squeeze of lemon.&lt;br /&gt;&lt;br /&gt;That fizz sounds about perfect when Tavern Law starts outdoor seating in mid-July. And that succulent burger, coated in provolone and topped with two slabs of sous vide pork belly, the soft bun spongy enough to absorb the fat that would have dripped on your shirt otherwise. Juicy and rich. And evil. She wrote in part, "After reading Bruni’s article, I'm excited to re-visit what some call “the Vatican of saloons." I plan to put a Doug Quinn performance at the top of my agenda the next time I’m in New York. In the meantime, I’m sloshing together a Tanqueray &amp; Tonic on this sunny Memorial Day and giving thanks for the fabulous bartenders and bar scenes I’ve gotten to know over the years.&lt;br /&gt;&lt;br /&gt;These are some of my favorites. I’d love to hear about yours.&lt;br /&gt;&lt;br /&gt;I was first introduced to David Nelson (left) over a captivating concoction called a  Kentucky Tuxedo, a heavenly marriage of Bulleit Bourbon, Sherry, homemade lavender syrup and homemade orange bitters. But the engaging bartender/mixologist of Spur Gastropub and Tavern Law in Seattle has charmed me in many other way since that first sip. At Spur, David’s creative, but never contrived, cocktails share the stage with the fabulous food of chefs Brian McCracken and Dana Tough. But at Tavern Law, it's all David, all the time. Even though McCracken and Tough offer a tantalizing menu, the focus at Tavern Law is on Nelson’s unique,  delicious drinks. It’s a treat to soak up the warmth and quiet energy of the room and to watch Nelson deftly whip up both classics and original potions. He loves to share his knowledge and passion with customers. Alcohol is, admittedly, an indulgence. But even—no, especially—if you’ve resolved to drink less in 2010 (last year was a tough one for all of us), there are a few things you can do to get more bang for your liver-processing buck.&lt;br /&gt;&lt;br /&gt;Here, five ways to drink better this year.&lt;br /&gt;&lt;br /&gt;1. Leave it up to the bartender.&lt;br /&gt;&lt;br /&gt;When Tavern Law opened on Capitol Hill last year, people raved about the upstairs bar. (Needle and Thread, I think they call it?) Accessed through a discrete hidden stairway, the hideaway bar offered no menus—patrons described to the tender their favorite spirits and tastes (sweet, bitter, etc) and the bartender mixed them up a cocktail of his choice.&lt;br /&gt;&lt;br /&gt;Thing is, “bartender’s choice” has been the convention at cocktail bars for years—and it’s pretty much standard policy for serious drinkers. There’s no need to study up on sidecars and pisco sours before sidling up to a bar stool, just walk in and ask the bartender what he feels like serving. Kaufman writes, "I've drunk too many of these (damn that six-block walk!) to omit the Gun Club at Tavern Law, Dana Tough and Brian McCracken's new cocktail bar. Of course, you can make a reservation upstairs and get a customized cocktail designed to your tastes, but I've preferred to pick through the arcana listed on master bartender David Nelson's menu downstairs. Made with gin, Lillet, Maraschino, and a few drops of Scotch for smoke, the Gun Club tastes like a downed electric wire, crackling and throwing sparks. Today she writes, "Seattle’s Tavern Law successfully invokes the glory days of American bartending while also offering the best food, drink, talent and know-how of the new millennium."&lt;br /&gt;&lt;br /&gt;In addition to diving into the allure of Becherovka (which she describes as "a prized alcoholic drink, made in Karlovy Vary (aka Karlsbad) in the Czech Republic, from anise seed, cinnamon and a secret mash of 32 herbs") Clancy also sips Nelson's Eastern Waterfront. Of it she says: "a fragrant mingling of gin, Peychaud’s Bitters, Martini &amp; Rossi white vermouth and Becherovka. It’s one of the many fascinating cocktails dreamed up by the eatery’s talented bartender/mixologist David Nelson (pictured here, photo by Clancy). On the same night that he splashed Becherovka into my son Nicholas’ cocktail, Nelson swirled together for me two types of rum (Rhum Agricole and blackstrap), allspice liqueur, lime juice, Chartreuse  and Demerara sugar. Though it didn’t have a name yet, the “work-in-progress” was an aromatic and warmly satisfying cocktail, perfect for sipping while the rain drummed the sidewalks in front of the atmospheric new saloon. She wrote, "Drinks include a thoughtful selection of cider and beer, plus a wine list commendably long on half-bottles, but the cocktail is king and the chief courtier is David Nelson, also Spur's talented bar manager.&lt;br /&gt;Libations are crafted in the wood-paneled, book-lined downstairs as well as in the secret lounge above by a cadre of professionals in silk vests and ties whose passion for and knowledge of spirits equals their prowess at blending them.&lt;br /&gt;They are conjurers bent on surprise; virtuosos who mix and stir with precision, shake with vigor, then pour the results into just the right vintage vessel. The most high-tech tool at their disposal is a hand-operated juicer.&lt;br /&gt;Come here to learn the difference between a rickey and a buck, a daisy and a smash. Can't decide? He was kind enough to include Tavern Law writing,"In Seattle, where some folks seem to embrace all things classic cocktail, now comes the hideaway bars that replicate the hush-hush aura of the Prohibition-era speak-easies... The hotly anticipated Tavern Law — mentioned in The New York Times and on cocktail-geek blogs — debuted in late August on Capitol Hill, opened by the owners of the nationally acclaimed Spur Gastropub in Belltown. At Tavern Law, a vault door leads to a den adorned with Prohibition-era motifs: a flask believed to be owned by Houdini, vintage glassware and custom furniture recalling designs from the 1930s. Above, antique chandeliers. Below, a floor constructed from reclaimed barn wood in Montana. "We wanted to celebrate the classic cocktail and the art of bartending," said Brian McCracken, who co-owns Tavern Law with chef Dana Tough. While Nelson's cocktails at Spur are classics reworked with decidedly modern elements (smoky martini with liquid olive, anyone?), Tavern Law is focused squarely on his scholarship of the classic cocktail. And the one getting all the buzz is Capitol Hill's Tavern Law. "(In the 1930s) it legalized the sale of liquor in public establishments without the sale of a room. It was really a pivotal law in developing what we know as bars and saloons and taverns today," says Brian McCracken.McCracken, along with Dana Tough -- the same guys behind &lt;a href="http://spurseattle.com/"&gt;Spur gastropub&lt;/a&gt; -- opened Tavern Law in late August. It's a fun, approachable space where you can enjoy some really good food and interesting pre-prohibition cocktails. "In the main bar, we've got a very early 20th century-inspired masculine feeling space with a lot of rich, dark woods and dark leather seats and booths, and a really nice curving mahogany bar," says Brian.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;The two were inspired to open Tavern Law after a trip to some of New York City's finest speakeasies last December. "I feel like a few of the different speakeasy-style places were destination spots that after one visit, you kind of got your fill, you know?" says Brian. "I want Tavern Law to feel like some place that you've had a really great experience that you want to recreate and you want to come back and you want to try it over and over again."&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Tavern Law is all about classic cocktails, whereas Spur's have a more modern twist. And while the food at Spur leans towards the higher-end, Tavern Law offers up a more humble menu which Dana describes as good products prepared simply. "We have a chicken leg and thigh which is served with some new potatoes, English peas dressed with creme fraiche and grenache vinegar reduction with a little sea salt on top of the chicken; very simple," he says. A bit about what we're waiting for... Talk about good press. Tavern Law got a fourth-graf mention in William Grimes’ &lt;a href="http://www.nytimes.com/2009/06/03/dining/03speak.html?scp=1&amp;amp;sq=speakeasy&amp;amp;st=cse" target="_blank"&gt;article&lt;/a&gt; about speakeasies in today’s New York Times, and the place hasn’t even opened yet. Opening has, in fact been delayed: Chef/owners Brian McCracken and Dana Tough hope to be up and running by mid-July. The Capitol Hill bar and restaurant will have a cocktail menu with more than 70 pre-prohibition and prohibition-era drinks designed by “stone cold fox” &lt;a href="http://www.seattlemet.com/blogs/sauced/spur-davidnelson-0428/"&gt;David Nelson,&lt;/a&gt; who will be a far less frequent site at the trio’s well-loved &lt;a href="http://www.seattlemet.com/eat-and-drink/find-a-restaurant/#/search:&amp;amp;business_listing.name=spur/info:394/"&gt;Spur&lt;/a&gt;, though he will continue to manage the Belltown bar as well.&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;br /&gt;Food, according to McCracken and Tough, will be more “humble” than at Spur. Humble being a relative term: the Tavern Law Monte Cristo ( “around $12”) is stuffed with sliced pork shoulder with maple and smoked olive oil that they’re cooking sous vide for seven hours; a jam of fresh huckleberries; and the gruyere-esque Valentina cheese from Estrella Family Creamery. What they really seem to mean by humble is a certain old-school efficiency. “We’ll bring in a case of fresh vegetables and use them until they’re gone…buy a whole pig and serve dishes with all the different cuts of meat,” says Dana. The simple chalkboard menu with feature 8-10 revolving plates, all under $15.&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;br /&gt;Happy hour is still in planning stages.&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;br /&gt;Classic cocktails, seasonal food. Sounds good. But what makes it a speakeasy? Dana and Brian say they were inspired by NY’s throwback bars—they recently went on a 2.5-day Manhattan speakeasy bender, and were especially impressed with Milk and Honey—but they’ve also built in some speakeasy-style surprises.&lt;/div&gt;&lt;br /&gt;&lt;div&gt;What those are, exactly, McCracken and Tough want to keep a secret for now, but, they say, word is out among industry types. So if you really want to know, try bribing your bartender. As well as updating readers on the food and focus at Spur, Leson wrote that “now they're set to do it all over again with Tavern Law -- a "speakeasy bar" expected to open late next month at the &lt;a href="http://www.tracelofts.com/"&gt;Trace Lofts&lt;/a&gt; complex on Capitol Hill.&lt;br /&gt;&lt;br /&gt;Today, the windows at 1406 12th Avenue stand covered, but what we'll eventually find inside is seating for 80, upstairs and down. "It's going to have a very dark-wood masculine feel downstairs, with a beautiful mahogany curving bar and a vintage cooler behind that," says Tough. A 20-foot Venetian-plaster mural depicting a lovely lady draped in a glamorous gown will overlook bookcases, dark leather banquettes and booths, and we can expect "some little surprises along the way."&lt;br /&gt;&lt;br /&gt;It will come as no surprise that these roaring 20-somethings and masters of the memorable menu plan to replicate the formula that's brought them so &lt;a href="http://www.seattleweekly.com/2008-09-10/food/spur-is-trying-awfully-hard/"&gt;much praise&lt;/a&gt;. Nor that (barman David) Nelson will fuel the fire on the Hill with another classic cocktail agenda. "David's staying true to that era," says Tough.&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;br /&gt;McCracken describes their chalkboard menu as short and ever-changing "so it doesn't get boring." We might find tweaks on a wedge salad with Green Goddess dressing, perhaps a Monte Cristo sandwich, or clams and oysters dolled up in Casino finery. McCracken insists their fare will be "less fussy" than Spur's but no less appealing. Prices? Last summer the duo opened &lt;a href="http://www.spurseattle.com/"&gt;Spur Gastropub&lt;/a&gt; in Seattle’s Belltown neighborhood which has already been recognized as one of the country’s six top gastropubs by Food &amp;amp; Wine magazine. This year they join lead bartender David Nelson in opening Tavern Law in late June on Seattle’s Capitol Hill. The 21-and-over restaurant/bar will anchor &lt;a href="http://www.tracelofts.com/"&gt;Trace Lofts&lt;/a&gt;, the historic-meets-modern residential and retail project located on 12th Avenue within the Pike Pine Triangle. At Tavern Law the trio will focus on classic cocktails and full-flavored, refined foods served in an environment reminiscent of Speakeasy-era establishments of the 1920’s.&lt;br /&gt;&lt;br /&gt;In 1832 the Pioneer Inn and Tavern Law legalized drinking in public bars and saloons. The Golden Age of cocktails thrived for nearly a century until the 1919 Volstead Act almost destroyed the craft by outlawing the production and pleasure of alcoholic beverages. However, in hidden rooms and dark basements, thirsty patrons still sought spirits. And so the Speakeasy was born, booming until the repeal of Prohibition in 1933.
